Best-Ever Grilled Salmon & Greek Tomato & Cucumber Salad

Heart-healthy grilled salmon is packed with protein and omega-3 fatty acids and this recipe makes a melt-in-your-mouth salmon dinner. This is an easy way to prepare salmon and it truly is delicious!  It only takes about 10 minutes of prep time and 12 minutes at most of grilling time.

You'll want to have all of your side dishes prepared and ready to serve so when this delicious salmon comes off the grill, it's chow time!

There are many delicious ways to prepare salmon. This is the way we enjoy it. It's simple, yet delicious and tender! We have prepared it for many people and everyone is surprised how easy it is when we share our two ingredients.

We usually buy the large fresh fillets you get at Costco. Or, from a quality fish market. Before cutting fish, rinse it and pat dry with paper towels. If you can't use this many pieces at one serving, once they're cut wrap well and freeze for up to 3 months in your freezer. Thaw for 1-2 days in your refrigerator.

Slice your salmon fillet into serving portions. Place on tinfoil.

Generously cover with the juice of fresh lemon or fresh lime. Squirt over both sides. I love it with lime. My husband prefers lemon.

Sprinkle both sides with Spade L Ranch Seafood Seasoning. As you can see above, it doesn't take much. I use a fork and lightly sprinkle over the top.

Preheat your grill to medium heat. Place your tinfoil with your salmon directly on the preheated grill.  Grill your salmon 4-6 minutes per 1/2 inch turning only once and grill on the other side. 

The key to delicious and tender salmon is NOT to over cook it. My husband is the master griller and he grills it for 6 minutes at most on each side (on tinfoil).  Oh my, it is perfect every time and sooo tender!  We really love it prepared this way!

For an easy side salad you might enjoy this tomato and cucumber salad. I grew up on my Yaya's (grandma in Greek) Greek salads. I call this my Greek Tomato & Cucumber Salad. If you follow my blog, you'll notice that many of my recipes are prefaced with "simple" or "easy".  That's because I love great food, but I'm a mother, grandmother, employee, blogger...you get my point. I love to cook and enjoy delicious food, but it's also nice when it's quick, easy and manageable. Usually!

Greek Tomato and Cucumber Salad
Serves 6-8


3 cups cherry tomatoes, sliced in half (I like to use half cherry tomatoes and 1/2 golden glow tomatoes)
1 cucumber, peeled, sliced and quartered
1/4 cup thinly sliced or shaved red onion
1/4 cup chopped Italian parsley
1/4 cup vegetable oil
 1 - 1/2 tablespoon red vinegar
1 teaspoon sugar
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper


Combine tomatoes, cucumber, red onion and parsley in a large bowl. In a small bowl, mix the vegetable oil, vinegar, sugar and salt and pepper until sugar is dissolved. Pour vinaigrette over tomato mixture and gently mix. Add more salt and pepper to taste. Serve at room temperature.
