Thursday Throwback - Bean and Vegetable Dip


Last November I shared this recipe for Bean and Vegetable Dip and while I don't typically like to re-post -- this is only my second time -- with fresh garden vegetables growing in the garden this is an ideal recipe for those fresh garden veggies! Plus, it's great for Game Day, since I'm sure you're all big football fans!!

Everyone has a delicious recipe that's so easy you know it by heart. This Bean and Vegetable Dip is one of those go-to recipes that's so delicious and easy to prepare, you'll want to commit it to memory.  

Need an appetizer for dinner or something to serve at a party or to last minute guests?  This is the perfect dish!  Enjoy it as a dip with corn chips or you'll also love it as a salad.

My favorite corn chips to serve with it is Tostitos, Hint of Lime, but any corn chips are delish. We also love the multigrain chips--yum! 

Around the holidays I keep the ingredients on hand so I always have something quick to prepare when I need something good, filling and quick.


Bean and Vegetable Dip

1 package Good Seasons Italian Dressing - mixed according to directions on package.

Drain and Rinse:
1 can black beans
1 can white beans
1 can corn

Chop:
1 green pepper
3 tomatoes (I like to use 5 Roma tomatoes)
1 bunch green onions

Mix all together, sprinkle with salt and pepper to taste.  Refrigerate for at least 1 hour before serving.
