Slow Cooker Mango Salsa Chicken + Recipe for Fresh Mango Salsa

Dinner doesn't get much easier than it does with this delicious Mango Salsa Chicken cooked in a crock pot and served over rice. Well, maybe if it's cold cereal and milk. But certainly not as delicious! 

And for a real treat, serve it with this simple and colorful fresh mango salsa, above, and your taste buds will thank you - and so will your family and friends! It's sweet, spicy and absolutely delicious.

Slow Cooker Mango Salsa Chicken


20 oz. Mango Salsa*
4-6 Boneless, Skinless Chicken Breasts
Cooked Rice

Optional Toppings:
Tortilla Chips
Shredded Cheese
Sour Cream
Fresh Mango Salsa (recipe below)

*You can use any mango salsa that you purchase at your grocery store. I have a wonderful Canned Mango Salsa Recipe that I'll be sharing later this fall with you, but any store-bought mango salsa works great for this recipe.


Prepare chicken breasts (wash and pat dry with a paper towel), place cleaned chicken in crock pot, pour mango salsa over top. Cook on high 4 hours or on low for 6 hours.

Cook rice according to package based on the number of servings you'll need for your family or group.

Shred chicken before serving using two forks - do not discard the liquid.

Serve chicken over rice with any additional toppings you desire.

 We love it with guacamole, sour cream, shredded cheese, and topped with fresh mango salsa (recipe below). It's delicious when you mix it all together and eat it with tortilla chips.

My family's favorite chips are these Tostitos Multigrain Scoops - they are yummy! They use them as their forks!!

Now for the fresh salsa - isn't all of this color beautiful? Make the salsa after you begin cooking your rice. It needs to rest for at least 15 minutes for the flavors to blend together.

 My son spent two years in the Philippines serving a mission for the Church of Jesus Christ of Latter-Day Saints and while he was there a very sweet woman taught him how to cook many different Filippino recipes and shared various cooking tricks and tips with him. One of those tips was how to cut and dice a mango. So my son, Nick, taught me how to dice mango and he is helping us on the blog today.

The mango has a flat-ish oblong pit in the center of it. Hold the mango with one hand, standing it on its end with the stem side down and beginning at the top, slice along one of the flat sides of the pit (as close as possible to the pit). Then repeat with the other side. You should end up with three pieces. The middle piece includes the pit.

Use a knife to make lengthwise and crosswise cuts along the mango halves, but try not to cut through the peel.

Invert the mango half and scoop off the segments using a spoon, or cut away the pieces using a paring knife. You may be able to peel the segments right off the peel with your fingers.

Take the mango piece with the pit and lay it flat on the cutting board. Use a paring knife to cut out the pit and remove the peel. You may be able to extract a little extra mango from around the pit for the salsa. If not, my kids enjoy slicing as much of the mango as possible around the pit with a knife and eating it.

Fresh Mango Salsa


3 ripe mangos, diced
1 medium red bell pepper, chopped
1/2 cup red onion, chopped
1/4 cup packed fresh cilantro leaves, chopped
1 jalapeno, seeded and minced*
1/4 cup fresh lime juice (1-2 large limes)
1/8 to 1/4 teaspoon salt, to taste

Sometimes I'll add an avocado, diced (also delicious)
I also added 1/4 cup diced green pepper from my garden

*You can control the heat by adding the seeds, but the flavor is delicious without them.  It's up to you!


In a serving bowl, combine the prepared mango, bell pepper, onion, cilantro and jalapeno. Drizzle with the lime juice and mix well. Season with salt to taste. For the best flavor, let the salsa rest for 10-15 minutes or longer.

Best served fresh.  Store leftover salsa covered in refrigerator for several days.

Serve this fresh mango salsa with chips, on fish, tacos or salads. I like to eat it as a salad itself. It's that delicious!

It's also amazing as an appetizer!
