Strawberry Bruschetta with Herb-Cheese Spread

Happy Monday!  I hope you all had a lovely weekend! Mine was jam-packed, as it usually is, but it was a beautiful weekend and I enjoyed it very much. I also enjoyed this wonderful fruity bruschetta. What makes this recipe so special is the aged balsamic vinegar and olive oil combined with the sweetness of the strawberries and served over the best herb-cheese spread. Stunning and delicious!

It is so delicious it's good enough to be served as the main course! For me, anyway. This could be my lunch or my dinner! I served it this weekend as an appetizer!

This makes a colorful and beautiful presentation on your table with the gorgeous red strawberries and the white herb spread. And the aroma of the fresh baguette and fresh herbs permeates the air and tastes as wonderful as it smells.

Here is what you do:

1 French Baguette - Sliced

For the toasted French baguette slices preheat your oven to 375 degrees.  Place the slices on a baking sheet.  Lightly brush the tops with olive oil.  Lightly sprinkle the slices with garlic salt.  Bake 10-12 minutes, or until lightly browned.  Watch closely, it doesn't take long.  You can also find pre-made Crostini's in your grocery store, but I prefer to slice my own. It's fresh and I don't feel that it takes that much effort for how much better it tastes. It's worth a little effort!

Herb-Cheese Spread


1 (8-ounce) package cream cheese, softened
2 tablespoons grated fresh Parmesan cheese
2 tablespoons minced fresh rosemary
2 tablespoons minced fresh sage
1 tablespoon whole milk
1/4 teaspoon garlic powder
1/4 teaspoon ground black pepper
Toasted French bread slices, for serving

In a mixer bowl, combine cheeses, rosemary, sage, milk, garlic powder, and pepper.  Beat at medium speed with a mixer until blended.  Serve with French bread.

NOTE:  Store in refrigerator

Strawberry Bruschetta

4-6 large strawberries (1 cup chopped)
4 large basil leaves, slivered
1 teaspoon extra virgin olive oil
1/2 teaspoon balsamic vinegar 
1/4 teaspoon lemon zest
kosher salt and pepper


Add the chopped strawberries to a small bowl, sprinkle with the slivered basil leaves, add lemon zest and dress with the extra virgin olive oil and balsamic vinegar. Mix gently.

Spread the herb-cheese spread over the bread slices and spoon the strawberry mixture on top. Guests may choose to sprinkle with kosher salt and ground black pepper, but it's optional.
