It was such a beautiful day today. Spring may not be official for a few more weeks, but it felt oh-so-Spring like with the temperature reaching 62F degrees. It was a perfect day for a light and healthy salad. I am crazy for mango and dream of ways to eat it. For a lite and refreshing way to enjoy a sweet mango, this salad is easy and perfect for a beautiful Spring-like day!
4 large Bibb or Boston lettuce leaves
1 medium avocado, pitted, peeled and sliced 1/4 inch thick
1 medium mango, pitted, peeled and sliced 1/4 inch thick
1/4 red onion, very thinly sliced into rounds
4 lime wedges
1/4 teaspoon salt
fresh ground black pepper
Place the lettuce on each serving plate. Arrange 4 to 5 slices each of avocado and mango, alternating them in a row, onto each lettuce cup. Top each with a few onion rounds and then squeeze a lime wedge over each salad. Season with salt and pepper and serve.
I love using Bibb lettuce leaves, but I had some spinach that I wanted to use up so I made it with spinach instead. Use your favorite lettuce. This salad looks beautiful served on individual salad plates. It's perfect with chicken or fish, and wild rice. Makes me hungry!
