This week has been focused on new trends for 2016. Today, however, I'm feeling like something old. The recipe I'm sharing is nothing new around my home, but it is the best recipe for Chicken Salad Sandwiches I've ever tasted. Everyone I serve these delicious sandwiches to, love them.
Chicken Salad Croissant Sandwiches
Ingredients:
4 large cans premium white chicken (I prefer the large cans you buy from Costco)
(or, 4-5 chicken breasts, boil until cooked, then shred with a fork)

4-6 green onions, sliced thinly
¼ C chopped black olives, if desired
4 medium stalks celery, chopped (1 cup)
1 C sliced almonds or salted cashews
2 C red grapes sliced in half (I use 3 C grapes because we love a lot of grapes)

Salt & Pepper to taste (approximately ½ tsp. salt and 1 tsp. pepper)
Croissants (14 large or 24 small)
Sauce:
1 - 8 oz pkg. Philadelphia Cream Cheese, softened
1 C sour cream
1 Tbls. lemon juice
1 C mayonnaise
1. In a large bowl, add the chicken, green onions, olives, celery, almonds (or cashews), and grapes. Toss to combine. Set bowl aside.
2. In a small bowl, add the cream cheese, sour cream, lemon juice, mayonnaise, salt and pepper. Stir well with a fork until combined (a few small lumps of cream cheese is fine - it will blend in).
3. Pour the sauce over the chicken mixture. Stir until combined.
4. Cover and refrigerate 6 hours or overnight.
5. Slice each croissant roll in half. Spread with approximately 1/2 cup (depending on the size of croissant) of chicken salad over the bottom half; top with the other half.
2. In a small bowl, add the cream cheese, sour cream, lemon juice, mayonnaise, salt and pepper. Stir well with a fork until combined (a few small lumps of cream cheese is fine - it will blend in).
3. Pour the sauce over the chicken mixture. Stir until combined.
4. Cover and refrigerate 6 hours or overnight.
5. Slice each croissant roll in half. Spread with approximately 1/2 cup (depending on the size of croissant) of chicken salad over the bottom half; top with the other half.
Serve and enjoy!

I made them for our family party on New Year's Eve and this is seriously the most delicious appetizer. And best of all, they're easy to make. You definitely need to try them. Your guests will love devour them!

Made these and they are so delicious!! The best chicken salad sandwiches I have tried...amazing! And I did try those artichoke wonton wrappers and they are so good!! One of my favorites!! Thank you for these recipes!!
